Biodiversity at Tasca d'Almerita
The biodiversity of a vineyard is defined at the entire set of life forms present on the surface and in the soil and includes plants, animals and micro-organism. The soil thus contains an intimate and multiple-layered interaction between mineral, organic and gaseous contents and living organisms. Biodiversity affects a soil’s ability to withstand rapid changes that occur under different environmental conditions and the possibility of reaching a state of equilibrium, which is at the basis of the concept of resilience.
Among many other good practices, the maintenance of biodiversity at @tascadalmerita‘s @tenutaregaleali is also ensured by 97 Comisan sheep, also called “red head” sheep because of the characteristic colour of the wool on their head. Natural weed killers, they are used for the production of high quality milk, from which an exquisite #ricotta cheese in obtained, used for the personal consumption of the Tasca family.
Sustainability means also sharing a goal and participating together to its fulfilment. The #cheesemaker is one tiny but essential piece of a larger community system. Sustainability means keeping this network of people and their know-how alive, striving for creating products that tell the story of a territory.
The inland region where #TenutaRegaleali estate is located hosts the island’s main production of sheep’s milk cheeses, such as tuma, ricotta, primo sale and pecorino. During its intensive cooking programs, @annatascalanza takes its students to a full-day workshop alongside a cheesemaker. Students learn his whole production cycle, from taking the sheep to their mountain pastures to straining ricotta. Attendees also visit Regaleali’s shepherd Totò, to learn the art of daily milking routines. Every day, seven days a week, Totò wakes up at 5am, milks his sheep by hand and makes cheese.
Tasca d'Almerita believes that being socially responsible means not only satisfying legal obligations fully but also going further and investing in human capital, in the environment and in relationships with other stakeholders, which include operators, consumers, residents and bystanders.
