This week we start from the bottle (as Hong Kong public venues and bars are allowed to reopen their doors: cheers!), introducing you @valle_reale Trebbiano d’Abruzzo: made from organic grapes with careful attention to biodynamic principles and produced by using only indigenous yeasts, patiently nurturing the spontaneous fermentation of the grape must.⁣

🍇 The grape: #Trebbiano may refer to a number of distinct grape varieties. That’s why there is always an adjective added to the term “Trebbiano” that is related to its place of origin. Trebbiano d’Abruzzo is one of the native white grape varieties of #Abruzzo coming from the most ancient tradition (there are references to Trebbiano in Italy during Roman times). ⁣

🍷The wine: Trebbiano d’Abruzzo DOC (“Denominazione di Origine Controllata” means “Controlled Designation of Origin”) is a white wine made from at least 85% Trebbiano grapes. It’s a medium-bodied palate with a salty mineral note on the finish. @valle_reale Trebbiano d’Abruzzo DOC is a blend of the best Trebbiano grapes from all Valle Reale vineyards where this variety grows. ⁣

Thanks to its high natural acidity and neutral aromas, it works best with straightforward dishes, made with simple preparation and in-season ingredients. We decided to pair it with @baked_hk “OH MY GOD” mushroom on sourdough: the mellowness of sautéed portobello mushroom cooked in mozzarella, cream and black truffle paté is enhanced by Trebbiano’s refreshing nature. Its gentle crispness will do well in neutralising the mushroom’s rich and gamey flavours.
